Gluten-Free Pineapple Smoothie

The orange juice and pineapple lend a bright note—along with healthy amounts of vitamin C—to this tropical-themed beverage, making it a perfect breakfast go-to. (The banana? It contributes fiber and potassium.)

1 cup coconut milk

1 cup freshly squeezed orange juice

1 cup chopped fresh pineapple

1 banana

2 tbsp coconut oil (melted)

1. Put all of the ingredients, except for the coconut oil, in the refrigerator for a couple of hours to cool.
2. Combine the coconut milk, orange juice, pineapple and banana in a blender and blend until smooth.
3. With the blender running, pour the melted coconut oil into the blender. Blend for 1 minute.

    Yields 2 servings
