Kiwis have become a regular feature in American supermarkets, with the traditional green kiwi now seen alongside yellow and less-common red fruits. What all kiwis have in common is a high vitamin C content along with potassium, folate and a variety of phytonutrients. But where kiwis really shine is in the amount of fiber they provide, the type linked to a healthy microbiome mix and better digestive well-being.
When buying kiwis, look for fruits that have some give to them but aren’t mushy. Ripe ones will have a light, fruity scent; unripe kiwis don’t have any aroma at all. Store kiwifruit at room temperature to ripen them, then in the fridge to keep them from spoiling.
1 1/2 cups cooked, shredded chicken breast (8 oz)
3 green kiwifruit, peeled, quartered and sliced
1 apple, cored and diced
1/2 cup sliced celery
1/3 cup golden raisins
1/2 cup plain nonfat yogurt
1 1/2 tsp curry powder
4 tsp brown sugar, packed
4 tsp lime juice
1/4 tsp salt
4 whole-wheat pita breads
1. Mix the chicken, kiwifruit, apple, celery and raisins in a large bowl, and set aside.
2. Blend the yogurt, curry powder, brown sugar, lime juice and salt in a small bowl. Pour over the chicken mixture and toss lightly until blended.
3. Stuff chicken salad into the pita bread halves, and serve immediately.
