Breakfast is the most important meal of the day, but never more so than when you’re expecting. These muffins are packed with nutrients to nourish you and your baby, and they also contain the fiber you need to maintain intestinal comfort.
- 8 large bananas
- 3 egg whites
- 1 1/2 cups wheat flour
- 1 1/2 cups oat bran
- 2 tsp baking powder
- 2 cups oatmeal
- 1 cup skim milk
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- 1/2 cup raisins
cooking spray
- In a large bowl, mash bananas and egg whites together. Mix in remaining ingredients.
- Spray a large muffin tin with cooking spray. Pour in batter.
- Bake at 400°F for 25–30 minutes.
Yield: 6 muffins
