3 Unusual Soups

Hosting a holiday party and you want to wow your guests with something different? Try one of these three healthy soups, including ingredients such as chocolate, kefir and shiitake!

Chocolate Portobello Soup

4  cups coarsely chopped portobello mushrooms

5  tbsp olive oil

1  medium onion, finely chopped

2  qts chicken stock

1  oz finely grated high-quality dark chocolate (75% cacao content)

Pepper, salt and thyme, to taste

1. Toss the mushrooms in 3 tbsp of the oil and either sauté until soft or roast in a 400° oven for 30 minutes.
2. Place the remaining oil in a stockpot over medium-high heat. Add the onion and sauté until lightly browned.
3. Place the mushrooms and onions in a blender with the chicken stock, pureé and return to the pot.
4. Bring to just below a simmer, then add the chocolate, stirring constantly, until the chocolate is melted and thoroughly blended.
5. Add seasonings to taste, and serve immediately. (For a particularly pleasing appearance, garnish with a drizzle of Greek yogurt and some extra pepper.)

    Potato & Kefir Soup

    1 tbsp vegetable oil

    2 cups diced sweet onion

    2 cups diced sweet potato

    1 cup diced white potato

    4 cups reduced-fat chicken broth (or vegetable broth)

    Salt and pepper

    2 cups plain kefir

    2 tbsp chopped chives

    1. Heat the oil in a stockpot; add onion and sauté 3-4 minutes.
    2. Add sweet and white potatoes and chicken broth; bring to a boil. Then reduce heat and simmer 25–30 minutes.
    3. Puree soup and season with salt and pepper. Whisk in kefir and serve with a sprinkling of chives.

      Yields 6 servings

      Shiitake and Wakame Soup

      8 oz firm tofu, cut into cubes*

      1 pkg (2 oz) dried wakame

      1 clove garlic, crushed

      1/2 medium onion, chopped

      1 chicken or vegetable bouillon cube

      4 shiitake mushrooms

      pinch sea salt

      3 cups water

      1. Combine ingredients in a soup pot. Cover and bring to a boil.
      2. Reduce heat until boil is reduced to a simmer; leave cover ajar. Cook until the tofu is cooked through, about 10 minutes.

        *You can substitute chicken thighs or prawns for the tofu, if desired; cooking time may increase as a result.

        Yields 3 servings
